The different regions of Thailand also differ in their cuisine. The basic dishes are almost everywhere the same : rice and curry with or without coconut milk; soupy dishes with a spicy, hot or mild taste; Vegetables with roasted meat, numerous chilli sauces with vegetables, spicy Thai-style salad, grilled and cooked dishes.
Such dishes are prepared differently depending on the region.
Typically sticky rice is preferred in the north and northeast. People in the northeast and south usually eat very spicy.
Thais eat three times a day. There are early risers People who work hard and need a real meal in the morning, i.e. rice with curry or other side dishes.
Thais like to eat noodles for lunch because it is light as it is quite warm in Thailand, so a lighter meal is preferred during the day. In the evening there is usually a large meal, as dinner is the main meal of the Thai people.
The working people have breakfast between 6 a.m. and half past seven. Lunch usually starts at eleven o’clock. The Thais eat dinner earlier, between 5 and 8 p.m. But it differs from family to family. After the meal, fruit or a dessert is usually served.
Many traditional Thai desserts used to be flavored with candle smoke using a special process. Some desserts like Thong Yip and Feu Thong, sweet dishes made from sugar and egg yolk, come from the Portuguese kitchen.
Thais like to eat small dishes between meals, but usually not sweets. Thai people love to eat almost any time of the day or night.
On the street, very often to see stands, mobile cookers, which are set up at short notice where many people work or pass by.
There you can get e.g. noodle dishes, grilled pork ,Thai Papaya salad ( Som-Tam ) made from raw papaya and eat with fried chicken / sticky rice. At some open street stalls, all kinds of food are offered around the clock.
